Special Holiday breakfasts are planned using natural ingredients in fresh, new ways. Guests are treated to Christmas Compote, Hot Mulled Cider and Christmas Cranberry Muffins.
Recipe for Christmas Cranberry Muffins
Nature's Santas
welcome guests.
- Coarsely chop 1 cup of fresh cranberries
- Sprinkle with ¼ cup sugar
- Set aside.
- In bowl stir together:
- 1&1/2 cups flour
- ¼ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground allspice
- Make a well in the center of the dry ingredients.
- Combine
- 1 beaten egg
- ¼ teaspoon grated orange peel
- ¾ cup orange juice
- 1/3 cup melted butter
Add all at once to flour mixture. Stir just to moisten. Fold in cranberry mixture. Fill greased muffin cups 2/3rds full. Bake at 375 degrees for 15-20 minutes. Makes 12 large muffins. (Excerpted from Fresh Ideas for Breakfast from The Atrium Bed & Breakfast cookbook.)
